This Beaufort cheese from the Savoie in France was made in the Summer of 2022, during the 100 days of “Alpage” when the cows are at the highest altitude. “Alpage” denotes that the cheese was made from a single milking of a single chalet herd of cows.
During the Alpage period, three seasons are crammed into the 100 days between the receding snows of Spring and the new falls of Autumn. The hurried activities of nature on the sloping mountain meadows lend this cheese the most wonderful flavours and aromas which give Beaufort d’Alpage the undisputed crown of
 “King of all French Cheese.” In iago we always stock Beaufort d’Été which is made during the same 100 days but with less strict rules about milk provenance.
Every December we acquire a whole wheel of Beaufort d’Alpage as a special Winter treat for our customers.
