Aged balsamic vinegar of Modena I.G.P. 250ml. This vinegar is made by combining grape must with a small amount of wine vinegar and ageing the resulting mixture in a wooden barrel. It obtains flavours from the wood whilst concentrating as moisture escapes from the barrel.
This balsamic vinegar of Modena I.G.P. far surpasses the requirements for being named as such, having a particularly long ageing process and using only local grapes and oak barrels.
We sell this vinegar at three different ages, the oldest having the most syrupy consistency and the most concentrated, rounded flavour. All three have been aged for at least three years and therefore qualify for “invecchiato” (aged) status.
